With all of the Easter Candy around, Best-Ever Poached Pears make a wonderful, healthy Mediterranean-style dessert for your Easter meal. It goes well with lamb, ham, or any other meats you serve.

Our class made this dessert recently, and it was a big hit. Easy to do, you will want to make it more than once.

Best-Ever Poached Pears

To serve 6:

  • 6 medium pears, peeled, cut in half and the core removed
  • 1 1/2 cups of water
  • 1/3 cup apple juice
  • 1/2 cup finely chopped or thin-sliced almonds, toasted
  • 2 T. brown sugar or honey
  • 1/8 tsp. almond extract

Place the pears, cut side down, in an ungreased 13-in. x  9-in. x 2-in baking dish. (I used a glass dish.) Combine water and apple juice, and pour over the pears. Cover (I use foil sheets), and bake for 35-45 minutes at 350 degree oven, or until the pears are tender.

Turn the pears over. Combine almonds, sugar or honey, and extract. Mix well. Spoon mixture into pear cavities. Bake, uncovered, for 5 minutes.

Serve warm. I like to serve in a small dish with sides so I can spoon just a bit of the liquid over each pear, but this is optional.

Be sure and include a Mediterranean-style green salad, with cucumbers and tomatoes (cherry tomatoes are the most flavorful right now), and your homemade EVOO dressing. The olive oil and Mediterranean style herbs (like Rosemary or Herbs de Provence) add a natural flavor to your salad without masking the tastes of fresh vegetables.

Remember, a meal does NOT have to be complicated to be good. Start with healthy foods from God’s abundance for us, and take your time eating. The social warmth of sharing food with those we care about promotes good digestion and good health.
